This is just unreal. I cannot believe how good this tastes!!! Just made a whole pot and have already eaten half of it! Hi, I plan on making this tonight and just wanted to clarify, for the roasted red peppers, do you use the entire jar or is it only one pepper? I have been searching for a vegan Mac and cheese that I actually can stand by..
This is the one! So so delicious. Gonna make it for my daughters 3rd Birthday party. I just made this for dinner. It is incredible how much this tastes like mac-and-cheese casserole, the baked kind with a flour roux. If I were to soak a lot of cashews to use in the future, would they keep well? I see you use them a lot in your recipes and wondered if I could save time by doing so. I was going to order some online.. I love mac n cheeze! Just made this and ate way too much of it.
You should re-christen it pizza mac and cheese, because it really does taste so much like pizza. Excellent recipe! This is pure magic, my husband and mother LOVE this. We made it two days in a row and trekked out in the snow to get raw cashews. Loved it. Fought with hubby over the pot licking. Toddler wolfed it down. Pizza macaroni night is now vying for a weekly slot.

I trieditalian seasoning but 1. I would recommend only one tsp of spice. My husband and I went vegan a little more than a year ago. This is his very favorite thing we make. So I save it now for Thanksgiving, Christmas and, at his request, his birthday this weekend. Serving the brussel sprouts on the side is a must. They gobbled it all up! This is my favorite dish I have made since switching to eating vegan about 8 months ago.
Absolutely delicious. I will challenge any cheese-eater to try this cheese sauce and tell me that it does not imitate mac and cheese extremely closely. Thanks Isa! Just leave out the pizza seasoning, or does it need to be replaced by something? I have made several mac and cheese recipes over the years and I was always disappointed. This past year I had totally given up trying anymore mac and cheese recipes. I saw yours and given it had such good reviews I decided to try it.
Then I stirred well to blend. Wow that made it perfect!

Also, may I ask what the cornstarch does? Made this tonight and it was fab. Used only a pinch of mustard as tried last week with a teaspoon as per the recipe and it over powered everything. Great comfort food served with crusty brown bread. I just made this last night for the first time. So delicious!
And cashews — they really are magic. This was delicious! Regardless, it came out creamy and delicious with zero guilt eating it! I find myself going to this version a lot! Never seem to have friggin tomato paste but always sun dried tomatoes which work fine! Been following you since ish. Oh my god, this is so good. This is a definite keeper and crowd-pleaser. I used the whole jar of red peppers, since many people were asking. I subbed marinara for tomato paste and it turned out a little like pizza mac and cheese.
Topped it with roasted peas. Damn good! I have the same blue rubber scrapers! Present from my dad from Canadian Tire! I am going to be making this during the week and am so excited! Somehow I decided to cook this dish for my girl, she was delighted. I recommend to all. The recipe is simple and the process does not take long. We made this with sun-dried tomatoes soaked with the cashews instead of tomato paste and peppers and it worked out great! Ours never got creamy, but it was so good. I thought about skipping the mustard, but it was perfect in this recipe. I want to try the baked one with broccoli now. Thank you, Isa!
